How to Make Paleo Bread

As you know, the biggest claim to fame of the Paleo Diet is the absence of grains. This may seem to make it an impossible diet to include breads, which are such a big addition to meal plans for today. While the bulk of breads are made from grain flours, there are alternatives. There are nut flours, which work very well. These may not make your typical “loaf of bread” but they do create some nice bread so you can include bread as a side with your meals and still remain on the Paleo Diet.

Here is a Paleo Bread recipe perfect to have with a meal (or even as a meal!):

Savory Paleo Bread

Ingredients:

  • 1 1/2 cup of bell peppers (red chopped fine)
  • 1 cup of onions (chopped fine)
  • 1 cup of ham (finely chopped and cooked)
  • 1/4 cup of olives (green chopped fine)
  • 1/4 cup of tomatoes (finely chopped dried)
  • 4 eggs
  • 3 1/3 tablespoons of almond flour
  • 3 1/3 tablespoons of sesame seeds
  • 3 1/3 tablespoons of poppy seeds
  • 1 teaspoon of baking powder
  • olive oil cooking spray

Directions:

Place a skillet on the stove and spray with the olive oil cooking spray. Turn heat to medium and add the 1 1/2 cups of red bell peppers, 1 cup of onions, 1/4 cup of green olives, 1/4 cup of dried tomatoes, and the cup of ham. Make sure all are finely chopped; chopping in the food processer is fine too. Preheat the oven to 350 degrees Fahrenheit. In 2 separate bowls, crack the 4 eggs separating the whites from the yolks. Using an electric beater beat the egg whites until peaks form. Slowly add the 3 1/3 tablespoons of almond flour and beat a few seconds. Gradually add the 4 egg yolks, and mix by hand. Add in the 3 1/3 tablespoons of sesame seeds and poppy seeds. Add in the cooked vegetables and ham, mixing well. Lastly, add the teaspoon of baking power. Spray a pan (loaf pan, or a small round pan) with cooking spray and add the batter. Bake it until a toothpick inserted in the middle comes out clean, almost an hour (start checking at around 45 minutes or sooner if the top is golden brown).
